Yes. If the squid is only for your personal use you might want to tune
the refresh pattern extremely. Squid may then serve sometimes stale
content, but if you are the only one using it...

You might want to try fli4l, this is a very small floppy-distro, but it
can boot from hdd as well. Dont know about mail, it is actually a linux
based router, but there are prebuild squid packages available as well as
samba, printspooler and other stuff.
Get some RAM. 32MB PS2-modules or smaller are dead cheap at ebay.
