Squid will show up in the router without port redirection enabled on the
server. But browsing won't work.

The question is not will Squid announce itself to the router--it will.
But clients won't be able to browse. A patched ip_gre module or ip_wccp
module (or some other patch for FreeBSD) is required, and port
rediection has to take place. These are not optional, and that is why
they are in the FAQ.

Not as far as I know, but I am not a router expert. I know that all of
my clients are using port redirection on the Squid box, and the custom
gre module as documented in the Squid FAQ.
It isn't difficult, so why not just do it the way that it is known to
work? It literally takes only one ipchains or iptables rule on Linux,
and certainly nothing significantly more complex on FreeBSD. If you are
using another OS, you might not have as much luck with transparent
proxying of any sort--I'm not sure which other OS variants will work,
but certainly not all of them.
If you follow the instructions in the FAQ, and still can't get things
working, I'm sure someone here can give you some pointers.
