do you have these entries in your squid.conf ?
acl snmppublic snmp_community public
snmp_access allow snmppublic localhost
snmp_port 3401
check if the port is listening
# netstat -na | grep 3401
udp 0 0 127.0.0.1:3401 0.0.0.0:*
udp 0 0 0.0.0.0:3401 0.0.0.0:*
and finally
# snmpwalk -p 3401 localhost public enterprises.nlanr.squid
should print out all values.
