make a bash script to do the email:
#!/bin/bash
mail user@domain.com < /usr/local/squid/logs/access/log
run this script from cron:
crontab -e and add the line, if you dont like the default editor, the
crontab file is in:
/var/spool/cron/crontabs/root
try that....
