Thank you, everyone who replied.  You each gave me something different, and it helped.  I used the /etc/rc.d/init.d/squid start command.  Then I tried ps -s |grep squid. (Don't understand that one yet ... but haven't looked for a man page.)  The reply was:
892 ? 00:00:00 squid
894 ? 00:00:00 squid
Is that good?  <g>  Mind you, I didn't do ANYTHING to squid.conf, and I didn't change ownership from root for anything.  (I keep reading, but the specific differs from the theoretical somehow.)
If I do /etc/rc.d/init.d/squid status, I get a "squid is running" or something generic.
I'm off to try to actually connect through squid ... Maybe try changing a few things.  (Seems dangerous at this level of ignorance.)  Just wanted to say thank you to everyone, and let you know that I appreciated and used your help.
